The head in the stars and feet firmly on the ground…
« I am a young alumnus of the Institut Paul Bocuse, and I am well placed, maybe “too well placed” according to some, to affirm that this school is a spring board that can help us go very far… The experience of the television program/contest « Plus Près des Etoiles », shown on France 3, put me under the projectors and I can’t complain. At 22 years old, it gave me the chance to be side by side with the best of our industry: Joël Robuchon, Michel Bras… they are icons for me ! But, IPB has prepared us for this. Having Mr. Paul Bocuse himself as a president of our school or Alain Ducasse as our class’ sponsor, we can only be in admiration… What struck me the most during the different stages of this media marathon was to realize to what point I had learned everything at this school. Even beyond the gestures and techniques that are taught to us during our program, there is more importantly the advice, the encouragement and the comments from our professors that permitted me to stay in the race and keep the course on my objective. All of the little details in which we don’t necessarily pay attention mark us, shape us. IPB is a school of life, a school of values : we learn how to learn ! I felt the same thing in reading Clet’s, Giovanna’s and Walgra’s the testimonies. Us Brazilians, we have this mixture of generosity and impulsivity in common ! What is excellent at school, is that the team knows how to decode these potentials. They have the experience of working with all of these cultural differences and the richness that it brings. They succeed in focusing us, they teach us how to take advantage of the best of ourselves. It is in their humility that we draw our own. When we read about Clet’s projects or Giovanna’s dream, or again, when we discover all that Walgra has accomplished, this illustrates perfectly the environment in the chateau : to be aware of the risks and difficulties but also to know how to provoke opportunities in order to surpass them. I agree totally with this philosophy: the head in the stars and feet firmly on the ground ! Happy Reading… » Rafael

Walgra runs on instinct. She has projects, one following the other. Her work adapts to her lifestyle and not the other way around. But be careful, sensitive souls stay away, even if she doesn’t say so (it isn’t her style), it is by dedicating her time and spending her energy that she is attacking 3 projects head on. Zoom on Walgra, the IPB adventurer!...

It was in the comfortable and intimate lounge that we met with Giovanna who, as do all students at the Institut, was carrying out an internship which lasts several weeks in all of the different departments of this four star hotel...
