CAMILLE PEDRINI
A 2002 graduate from the Institut Paul Bocuse in superior studies of culinary arts and management and after having honed her skills with great names like Anne-Sophie Pic and Mathieu Viannay, Camille Pedrini, at the age of 28, already has five years of home catering under her belt.
Lyon, Saint-Tropez, Paris, Geneva, in each of these cities where gourmets and enthusiasts of fine cooking are in no short number, The ‘Alchimie de Camille’ is off to a good start. It is hard to imagine that Camille Pedrini handles and manages the menus and appetizers that she offers through a varied menu of dishes by herself in the kitchen. Nevertheless, over the stove cooking for 6 to 30 guests, she doesn’t need anything else other than her talent as a chef and a good dose of pugnacity. “It’s a passion”, she confides; I wouldn’t want to associate anyone else.”
On the market side, her sister-in-law, Bénédicte Perret, is supplied by small producers from the region, preferably with organically grown fresh produce. Camille Pedrini also likes to work with spelt wheat, quinoa, different organic oils and “forgotten vegetables” like Jerusalem artichoke or parsnips. She throws herself into creative associations like carrot-hazelnut muffins, shrimp salad with pineapples and rice risotto with nettles.
This young lady never tires of this culinary nomadism. What is important to her is the creative aspect of her work, which she expresses in her way of setting the table with taste and originality. She is fulfilled by the sharing and exchange with the guests and the hostess, thus becoming their consultant for a day because, of course, the event begins by a preparatory meeting with the client who communicates his/her wishes. This is a crucial moment of planning that is always enjoyable and beneficial. And the chef can even unveil a few tasty tricks…
