CHRISTOPH LINDNER
Born in Cologne, Germany in 1982, he grew up in Luxemburg where he was naturalized, Christoph Linden currently lives in Phuket, Thailand !! At the moment, he is doing his 3rd year internship for the culinary arts program at the Institut within the framework of a 12 month management training at the very luxurious Aleenta Resort & Spa.
Christoph explained to us in all simplicity how he has come to live today at the other end of the world. “I like to drink and eat well and it shows. I am pretty physically imposing !” – Editorial note: Christoph is 1m96 and weighs 110 kilos !- His epicurean motivations and his experience in a restaurant in the Drôme during the summer of 2003 directed him naturally towards the restaurant industry after he received his European “bac” (multilingual).
He chose the Institut Paul Bocuse which is well known in Luxemburg. But he was also attracted by Lyon, the French gastronomic capital. Very motivated, he entered the Institut in 2004 and did his first internship with Jean-Christophe Ansanay-Alex “a remarkable and very human chef” at the l’Auberge de l’Ile in Lyon.
It was smack in the middle of the soccer world cup that he began working for Lenôtre in both Munich and Berlin for his 2nd internship. He was in the sous chef post, cooking for the 2000 to 3000 daily VIP place settings. He even became chef de cuisine and was responsible for 3 commis during the 45th International aeronautic trade show in England.
After having discovered the world of cooking, it was the managerial side of the industry that interested him. For his 3rd year, he worked towards his “licence professionelle”. It was his third internship that brought him to Thailand and the Aleenta Resort & Spa where today, he manages the orders for the F & B department. He puts his faculties for language and his sense of human relations to good use, working essentially with the Thai and progressively leaning the language and the culture. Christoph humbly tells us “The Thai language is starting to come along, at least the basics” and adds that “the education given at the school is very complete and I learned to avoid errors that seem obvious to me now. But the education at the Institut is also cultural being in contact with other students from the entire world. It is also for that that I feel so at ease far from home”.
Christoph confides that he would like to work a few more years in order to discover the diversities in this job, then come back to Europe to open up his own place “a place to relax to recharge your batteries, on a human scale with 10 or so rooms and a good restaurant !” The words of a true epicurean !
