The Sweet Life …

“In Italy, we pass the exam to become a good cook at a very young age” Francesca was not an exception to the rule! Her grandmother, for whom eating well is like a religion, was her first guide. The Institut Paul Bocuse took over from there. And today, for those of you who have the chance to visit Cassino, in the center of Italy, eating well has its address - Langolo Di Vino. Explanations….

As young as 10 years old, Francesca started on her path to the kitchen. When you live in Sora, near Rome, certain traditions are inescapable. At home, Francesca quickly learned that one doesn’t fool around with cooking.  When she finished high school, she tried her hand at political science, but quickly realized that for her, it would be gastronomy or nothing at all. Francesca had made up her mind. After a little research on the matter, the Institut Paul Bocuse turned up number 1 on her list. With such a symbolic first name, she couldn’t avoid a face to face with France.
 
Well equipped with Latin and Greek, she quickly became accustomed to speaking French.  Right from the beginning in her first year at the Clipper and her second where she lived in the “Croix Rousse”, she only has good memories. “Aside from accounting, I can say that everything seemed tailor made just for me. But, numbers were never my best friends. All of the pedagogical help was also essential, a huge thank you to the faculty and a particularly special one to Yvelise Dentzer”…Concerning her internships, she was first put into the hands of Jacques Lameloise in Burgundy, “a perfect mentor and teacher !”. Poissonnier, garde manger, saucier, she worked in all of the posts. At “La Pergola” in Rome, Chef Heinz Beck offered her a full time job after 6 months in her second internship. She spent one year at his side, helping to prepare the opening of a gastronomic restaurant. This was a great introduction to realizing a project, but her desire to travel was even stronger. Francesca wanted to perfect her English so she flew off to Ireland to work in the “Hayfield Manor”, a 5 star hotel. The French chef who hired her left the hotel soon after. A little disappointed, she only stayed for 10 months.
The rest, you can almost guess. “Langolo Di Vino” is Francesca and her future husband’s restaurant, a real love story. After her stroll in Ireland, she decided to return to Italy to recharge her batteries. While at Cassino, she dined a little too often at a quaint restaurant where she fell in love with the food and the sommelier.

And because destiny does things so well, they decided to create something together. “Langolo Di Vino has a different approach to dining. We have balanced the decoration, cooking, ambiance and wine to create an atmosphere where the customer feels at home. We are making our dream come true.” As a next step, they plan to open a second establishment closer to their home….Speaking of her personal experiences, she adds  some priceless words “ this job seems really hard, but I promise you that there are many more good points than bad.” Life is good, isn’t it?
