Creating customized restaurant environments

The restaurant at the Research Center is fully modular to reproduce all types of restaurant environments: classic, collective food services, brasserie, canteens and more.

The restaurant at the Research Center is fully modular to reproduce all types of restaurant environments: classic, institutional catering, brasserie, canteens and more. All aspects are fully modular, including interior layout and design and ambience elements like temperature, music and the visual environment.

The restaurant has six cameras and microphones (table and mobile) to record diners and study behavior in multiple situations. This makes it possible to analyze interaction between customers in a specific restaurant setting, including choices, discussions during the meal, whether they like a dish they try, etc. Equipment is run from a control room on the first floor.

The modular room also has removable flooring for easy access to wiring to install electrical connections, electricity controls and water at several different locations. Lighting is also modular with six defined areas for variable lighting (using a three-phase power rail). This flexible room adjusts to all types of dining environments to allow analysis of eating behavior in a variety of “real-world” contexts.
