A school focused on excellence

The growth and success of the Institut Paul Bocuse is energized by the commitment of its chairmen, Paul Bocuse and Gérard Pélisson, and by the support of the Board of Directors.

Institut Milestones:

1990: Creation of the "Ecole des Arts Culinaires et de l’Hôtellerie". Paul Bocuse, Honorary President.

1998: Gérard Pélisson, Co-President and Founder of the ACCOR hotel group becomes Chairman of the Board.
A pedagogical partnership with Lyon 3 University – IAE (Institute of Business Administration) and creation of the first undergraduate’s degree in France specialized in hotel and restaurant management.

2002: On 9 October, at Mr. Gérard Pélisson’s request, The Ecole des Arts Culinaires et de l’Hôtellerie was renamed to become Institut Paul Bocuse. The school opened up its capital in order to welcome 5 new members on its Board of Administration. Training programs for enthusiasts and for continuing education were launched.

2003: The direct management of the hotel “Le Royal” was taken over and it became the first hotel-school in Europe.

2004: Creation of the Institut Paul Bocuse Worldwide Alliance which sets up partnerships between the Institut and universities throughout the world.Partnerships launched with schools and universities around the world.

2005: Creation of a “Master’s in international hotel and restaurant management” (M.Sc.) delivered by the IAE at Lyon 3 University. Launching of the “Consultancy and Training” activity.

2007: The “Culinary Arts and Restaurant Management” training was recognized by a ministerial decree: title “Culinary Arts and Restaurant Manager” (a two-year degree). Registered in the Official Journal dated 14 January 2007. 

2008: Signature of a 30 year emphyteutic lease relative to the buildings that are the property of the city of Ecully, France and the Rhone-Alps region.

Opening of a Research Center, a unique platform in the world which is meant to become an international reference in research on pleasure and the science of “fine dining”. Opening of the.

2009: 15 leading companies in their respective business sectors make up the Board of Administration. The “International hotel and restaurant management program” was recognized by ministerial decree: level II (a three-year degree). Registered in the Official Journal dated 21 April 2009. Creation of a research committee.

2010: Opening of the first Restaurant-School in Shanghai on the top floor of the Rhone Alps Pavilion at Expo 2010 Shanghai.
Creation of the Bocuse & Co Committee chaired by Yannick Alléno.

2011: Opening of the Master’s Degree in Culinary Management & Innovation.
Creation of the incubator.

2012: The “Culinary Arts and Restaurant Management” training is registered on the National Register for Professional Certification level II by ministerial decree dated 11 January 2012, recorded in the Official Journal on 19 January 2012. It leads to a Bachelor's Degree in Gastronomy and Restaurant Management.
