The hotel and school Le Royal (5 stars) is a grand family residence located in the heart of Lyon on Place Bellecour. The hotel became part of the “M Gallery” brand created by the Accor Group in June 2008.

The Institut Paul Bocuse took over direct management of Le Royal in January 2003, creating Europe’s first hotel school. Here, students acquire and perfect their operational and management skills covering every aspect of hotellerie.

Thanks to this unique structure, the Institut’s students are trained within a functioning establishment by high level professionals, giving them hands on experience in the métier. This is a truly groundbreaking education concept since unlike other teaching establishments, hotel professionals provide the training, not teachers, acting as true mentors to encourage in-depth acquisition of skills by students.

The hotel school is also a singular platform for experimentation, bringing students unique insights into the demanding expectations of international leisure and business travelers. It provides a balance between the two training programs in Culinary Arts and Hotellerie.

The décor by Pierre-Yves Rochon features a harmony of blues—the royal color—and red, the opposite. This residence is a concentrate of “Lyon”, featuring local artisans and producers, bringing guests a memorable encounter with their creativity, quality and originality.

Le Royal has 74 rooms on 5 floors (including 10 suites). Collaboration with the training program of the Institut Paul Bocuse now lets guests enjoy original food and beverage offerings in the exclusive, convivial setting of a private residence and exquisite lounges.

Every aspect of culinary creations revolves around respect for products and ingredients and the seasons for a cuisine that is intimately aligned with guest expectations. Recipes are created by chefs and students in the “Culinary Arts and Restaurant Management” program at the Institut Paul Bocuse and masterfully executed by the chef of Le Royal.
