49 third year students were entrusted with the design and layout of the ‘Sixièmesens’ restaurant space, “Collections Scènes de la Table”, within the SIRHA food show, a world-renown meeting for professionals in the hotel and restaurant industry.
Sixièmesens “Collections Scènes de la Table”, will showcase the most recent trends in the arts of the table, furniture and decoration presented by the exhibitors and partners of SIRHA.
The 3rd year students in the International Hotel and Restaurant Management program (a professional undergraduate's degree in partnership with IAE Lyon – the University of Lyon School of Management ) have dreamed up the 4 ambiences that will be created in this space.
Of the 8 projects presented by the students, 4 were selected for full scale development.
They are:

Box ! Pop !
a fun and deco ambience
Cocoon
a comfortable and trendy ambience
Pic’ Chic
a luxury version of an old-time picnic
The students have worked on the development of their themes: finding a name, a logo, an ambience and the elaboration of the menu, the choice of the arts of the table, the decoration... so that each detail is consistent with the defined theme.
These unique and ephemeral restaurant concepts will subsequently be operated in the kitchen and in the dining room by the students themselves during the trade show. The Bachelor’s degree students will be supervised and managed by graduated students from the Master's degree in International Hotel and Foodservice Management (M.Sc.) of Institut Paul Bocuse and IAE de Lyon, and by faculty members from Institut Paul Bocuse.
In partnership with SIRHA, this project is an integral part of the pedagogical dynamics at Institut Paul Bocuse and demonstrates the trust given to our students by event organizers; some 150,000 visitors including 15,000 foreigners are expected to attend.
